Master baker Voskamp bakes perfect dutch ‘Oliebollen’ in CREARE frying lines

For years, Meesterbakker Voskamp dominated the rankings of the AD Oliebollen test, which means that you are of course always under a magnifying glass. The pressure to perform is always present, but in all situations the bakers at Meesterbakker Voskamp rely on their proven recipe and the CREARE frying lines.

 

The Dutch favorite end-of-year snack remains as popular as ever. Many people are willing to travel quite a distance for the best oliebol. They know this better than anyone at Meesterbakker Voskamp, ​​because after their first place in the AD Oliebollen test, people traveled from far and wide to Spijkenisse or one of the branches (Meisterbakker Voskamp has a total of seventeen stores) to buy the oliebollen. “During our peak times – between Christmas and New Year’s Eve – we produce 12,000 oliebollen per hour. We do this with three people per line, who are constantly baking. Then you need to have some capacity, so we have further expanded our production lines in recent years. We currently have four, four meter long CREARE frying lines and one six meter long CREARE frying line in our bakery. As a result, we can happily meet the high demand.”

 

AD Oliebollentest

Partly thanks to the extensive testing process and of course a successful recipe, Meesterbakker Voskamp has won the AD Oliebollen test several times. “Only then do you notice how many people are willing to travel for the best oliebol in the country. People literally come from Groningen to buy three hundred oliebollen. That is for the whole family, friends and neighbors. If you have thirty customers a day, it quickly adds up in terms of numbers.”

 

Constant high quality

With the automatic pass-through system for the heavy baskets and the basket return system of the CREARE® frying line, the baker is relieved as much as possible and the physical burden on the employees is much lower. In addition, this system ensures a fixed baking time. “The heating elements of the CREARE® have been developed in such a way that they generate a constant heat transfer. As a result, the oil remains structurally at the correct frying temperature during the frying process. In this way we get a consistently high quality of our oliebol and other fried products, something that is a requirement. The temperature of the oil is very stable, especially in the six-metre-long deep-frying line. We bake the best oil balls in it. Where the cold batter touches the hot oil, you have the highest risk of temperature loss. Thanks to the good heating elements in the CREARE® frying lines, the heat remains where you want it and at the right temperature.”

 

Team performance

At Meesterbakker Voskamp they experience the ease of use of the CREARE almost every day during this month. “Especially between Christmas and New Year’s Eve it is a big circus here,” says Arnold. “Everyone has to help, from baker to shop assistant. Everything revolves around oil balls. Even family and friends come to help. It is a team performance that we achieve in this extremely busy period. And every oliebol has to be perfect. We will not do it for less.”
