EverBake bread straps tailored to automatic production process

EverBake has developed a large batch of bakeware for an industrial bakery chain in the Netherlands. The automated production lines of the industry require a different approach than for the traditional baker. There are many factors to consider at the drawing board. The NBT editors spoke to Peter and Nick Eversdijk, from EverBake, to hear how this works.

EverBake has been producing bakeware for bakeries all over the world for more than 30 years. In addition, EverBake is a manufacturer of ZELA spray machines, stainless steel solutions, coatings and a dealer of HEUFT ovens and Icecool in the Netherlands for both traditional and industrial bakeries. Peter: “When I started producing bakeware in 1992, there was more manual work in the industrial bakery sector. The industrial sector has been faced with a tight labor market for many years. On the other hand, there is an increasing demand for bread and pastries in supermarkets and larger artisanal bakeries. Particularly due to a decline in the bakery around the corner. On top of that, we see the energy transition that is at a standstill in many areas in the Netherlands and rising costs. This is one of the reasons why production processes are continuously monitored and optimized. Technological progress in the industrial bakery has made enormous progress, allowing the production process to be accelerated.”

Designing the bread strap is precision work
Nick continues: “Because EverBake has been a loyal partner to the industry from the start, we have experienced every technological advance up close. This means we have the necessary technical knowledge required. Our bakeware evolves with every development in the production process. Because the production line is often built first, and only then are the baking straps or trays that will transport the product considered. This was also the case with the bakeware that we developed for this industrial bakery chain. Some lines were adjusted, so our bread straps had to be adjusted accordingly. Every bakery is slightly different, so there is no ‘standard’ bread strap. The bread straps must pass through the automatic production line without any problems. That is why we sat down with this customer’s engineers to discuss what requirements the design of the bread strap must meet. The design and the ultimately produced bread strap is precision work. The design of the bread straps therefore took into account the fully automatic line of this industrial bakery.”

Nick: “EverBake previously produced the baking trays for this bakery in one of the automatic production lines. Then came the request to produce bread straps, in subsets. When she made plans to overhaul an entire line, it was the perfect time to purchase new bread straps. We know the line well because we have previously completed several projects together. Because of this bakery’s confidence in the quality of our products, we have produced complete sets.”

During the design phase, we first looked at the various actions that the bread strap will undergo during the production process. There are a number of points that we had to take into account for the design. Such as right-angled takeovers, side and front stops, industrial washers, or a loading and unloading system. We have tailored the design accordingly by, among other things, using different brackets, ridges and reinforcements. The design is aimed at ensuring that our bread straps last as long as possible and that the product is transported smoothly through the automatic production line.”
