Subject: Bakkerij Pater chooses HEUFT and EverBake

Four new HEUFT VTT VULKAN TURBO THERM rack ovens with plate size 1000×800 mm were recently installed at Bakkerij Pater in Avenhorn. Bakerij Pater is part of the Amarant Bakkersholding and knows through the experience of fellow baker Van de Kletersteeg that they achieve great results with the HEUFT ovens, as we hear from Louis van Gelder. “We already have a good experience with HEUFT and EverBake in our bakery in Stoutenburg, which currently has 5 VTR VULKAN THERMO-ROLL and 2 VATO 12 deck ovens with automatic loading and unloading systems from HEUFT. In addition, the advantage is that EverBake can offer turnkey when it comes to ovens with bakeware.”
In the preliminary phase with EverBake, Bakerij Pater made its wishes known. “The specific wishes were that we would be flexible in the future with the choice of energy – gas, electric or hydrogen – and this can easily be adjusted with the HEUFT ovens with a minor intervention so that we no longer have to replace the ovens. In addition, the properties of the VULKAN TURBO-THERM rack oven are incredible compared to other rack ovens. Due to the enormous heat storage capacity, the oven reaches the set temperature again shortly after recharging. During the baking process, a large number of ventilation slots allow sensitive control of the air supply. The baking climate always remains soft and the risk of the baked goods drying out is limited as much as possible. Powerful thermal oil steam generators provide high efficiency steam during the oven cycle. The result speaks for itself,” says Louis.
Different energy sources
The choice initially fell on gas-fired ovens. Why? Louis: “We now have to rely on gas, because the power network cannot yet meet our needs. At a later stage we can even choose to bake hybrid, i.e. with gas in combination with electricity. The great thing about HEUFT is that the thermal oil heat exchanger system can be used with different energy sources such as gas, electricity or hydrogen and therefore we achieve the highest possible efficiency. In the heat exchanger, the liquid thermal oil absorbs the heat created during combustion and heats up to approximately 290° degrees. A magnetic clutch pump transports the hot oil via insulated round oil pipes to the consumption furnaces. Apart from this flow pressure, the system functions completely without pressure and therefore maximum safety. A 3-way valve controls the exact supply of the required thermal oil from the primary circuit to the secondary oven circuits.”
Savings
What about the energy savings? “We have already seen that HEUFT’s other ovens save considerably on gas, but these new rotary ovens are even 40% more efficient than the previous ones. However, the gain in floor space and the high combustion efficiency of at least 87% are just two convincing arguments for the use of thermal oil technology. In addition, the synthetic heat-carrying medium with its physical properties is an important factor in the baking process. For example, thermal oil absorbs approximately 2500 times more energy per unit volume than air. HEUFT baking ovens with thermal oil therefore heat up extremely quickly and energy-efficiently due to low radiation losses. The heat storage capacity of the thermal oil is also very efficient, for example compared to hot gas. This results in an extremely low temperature difference between the heat-carrying medium and the baking chamber. The delta-T is only 15°C for HEUFT ovens. The heat is transferred evenly and quietly to the baked product. Baking “batch after batch” under the best conditions in a constant oven atmosphere. The result: the best quality, perfectly reproducible, day in, day out.”
